Veg Chinese Fried Rice

Rice stir fried with vegetables,spices and sauces- a Indo-Chinese delicacy

INGREDIENTS-

  • Cabbage-1 cup
  • Carrot-1
  • Capsicum-1/2 cup
  • Cauliflower-1/2 cup
  • French beans-1/2 cup
  • Rice-1 cup
  • White vinegar-2.5 tsp
  • Soya sauce-2 tbs
  • chilli sauce-1.5 tsp
  • Ajinomoto-1/4 tsp
  • Salt-1.5 tsp
  • sugar-1/3tsp
  • Pepper powder-1 t.s
  • Ginger-2 tsp
  • Green chilli-2
  • Oil-3.5 tbs
PROCEDURE-
  1. Wash and soak rice for 15 minutes.
  2. Boil water in a big pan, add 1 t.s salt and then add soaked and drained rice in it and  boil  till 90% done.
  3. Drain and keep aside to cool down,then fluff with a fork,or use left over cooked rice.
  4. Grate carrot ,shred cabbage  and chop capsicum,cauliflower and beans into small pieces
  5. Heat oil in a pan,add grated ginger and chopped green chillies,saute.
  6. Now add chopped beans and cauliflower and saute for a while on high flame
  7. Add grated carrot and cabbage stir fry for a minute.
  8. Add soya sauce,salt,sugar and pepper powder and mix properly.
  9. Add boiled rice and  vinegar ,mix well and saute on high flame for a minute or till every thing mix well
  10. Serve hot.
Accompaniments to serve with fried rice –
 1-Chillies in vinegar –
Wash and chop 4 medium hot green chillies in roundels.add them in a cup of white vinegar ,add 1/2 t.s salt ,cover and soak for 4-5 hours .
2-Chilli oil–
Take 6 kashmiri whole red chillies,break into big pieces OR use 2 tbs red chilli flakes in a bowl,heat 1/2 cup oil,wait for few seconds and then pour it over the chillies ,let it cover for approx 1 hour and then strain and serve.(I have added chilli flakes and used without straining)
Serving suggestions-serve with green chillies in vinegar and chilli oil.

    more than schezwan rice i love this fried rice as its not too spicy and yet has all the flavours

    love the look dont like vinegar much as it give me funny taste in mouth
    wonder if i can skip tht
