Amla Mirch ki Achari Subzi

Ingredients

  • 350 grams Indian Gooseberry /amla
  • 100 grams Green Chillies / Hari Mirch
  • 2 tbsp Mustard Oil / Sarso ka tel
  • 3/4 tsp Turmeric Powder / Haldi Powder
  • 3/4 tsp Red Chilli powder / Laal mirch powder
  • 2 tsp Readymade Pickle Masala / Achar Masala (optional)
  • 1 tsp Coriander Powder / Dhaniya Powder
  • 2 tsp Sugar or jaggery OPTIONAL
  • Salt / Namak to taste

Tempering /Waghar

  • 2 tbsp Mustard Oil / Sarso ka tel
  • 1 tsp Cumin Seeds / Sabut Jeera
  • 1 tsp Fenugreek Seeds / Methidana
  • 1 tsp Fennel Seeds / Saunf
  • 1/4 tsp Asafoetida / Hing powder

Instructions

  • Wash amla and steam cook OR put in the pressure cooker with a glass of water.
  • Pressure cook for 1 whistle on medium heat.
  • When cooker cool down completely then open it and drain amla from the water.(you can use this water to make chapati dough or add in any daal or curry)
  • Gently press the boiled amla to separate the wedges or use a knife to separate them and remove the seed.
  • Wash green chilies and trim the stem and chop to make big slices .
  • Heat oil in a pan and add the tempering ingredients.(crush them lightly before adding in the tempering)
  • When seeds start crackling add the chopped green chilies and saute for few seconds.
  • Now add turmeric,amla pieces and all the spices and mix and stir well.
  • Cover the pan and simmer for 5 minutes(or till amla get cooked completely)
  • Open the lid, add sugar and stir fry for a minute.
  • Serve with rice,roti or any bread of your choice OR use as an instant pickle.

Notes

Note-
1-Use mild variety of green chilies to make it.
2-Can use any cooking oil of your choice.
3-If ready made pickle masala is not available then either use masala from your mango or chili pickle jar or just skip it,will  taste great both ways.
4-You can use the amla water to make the chapati dough or add in any curry or daal
