Ingredients

  • 750 gm Bottle gourd/Lauki /Doodhi
  • 1/3 cup Yogurt/Curd/ Dahi
  • 1 tsp Ginger / Adrak chopped
  • 1/4 cup Fresh Coriander / Cilantro / Hara Dhaniya chopped
  • 1 tsp Lemon Juice / Nimbu Ka Ras
  • to taste Sendha Namak /Rock Salt
  • pinch Sugar / Chini optional

Tadka/ Tempering

  • 3 tbsp Ghee or cooking oil
  • 1 tsp Cumin Seeds / Sabut Jeera
  • 1/4 tsp Asafoetida / Hing powder
  • few Curry Leaves / Kadi Patta optional
  • 2 Green Chillies / Hari Mirch chopped

Instructions

  • Wash , peel and chop the bottle gourd into small cubes.
  • Heat ghee or oil in a pressure cooker (you can also cook it in a pan instead of cooker , in that case add little extra water )
  • Add cumin seeds in ghee and when it start to crackle add asafoetida, curry leaves and green chilies and stir to mix.
  • Adjust the quantity of green chilies as per your taste .
  • Add the chopped bottle gourd ,salt and 1/4 cup water and stir to mix.
  • Close the lid and pressure cook on medium heat for 3 whistles or till done.
  • When the pressure subsides then open the lid and check it is done perfectly or not else give it few more whistles.
  • Now add pinch of sugar, beaten curd and the chopped ginger in the cooker and give it a boil and keep stirring to avoid curdling of curd.
  • After it start boiling simmer for a minute or 2.
  • Switch off the heat and then add chopped fresh coriander and lemon juice.
  • Serve with vrat ki poori or paratha with a tsp of ghee on top.

Notes

Note- for making it vegan you can skip yogurt and increase the quantity of lemon juice.
