Ingredients

  • 350 grams Cabbage / Patta Gobhi
  • 2 medium Potatoes / Aloo
  • 1 Tomatoes / Tamatar
  • 1/2 tsp Garam Masala Powder
  • 1 tsp Chilli Flakes / Kuti Lal Mirch
  • 1 tsp Mango Powder / Amchoor Powder OR 1 tsp lemon juice
  • 1/2 tsp Turmeric Powder / Haldi Powder
  • a pinch Sugar / Chini
  • 1 tsp Salt / Namak

Tempering / Tadka

  • 1/2 tsp Mustard Seeds / Rai
  • 1/4 tsp Cumin Seeds / Sabut Jeera
  • 1/4 tsp Fenugreek Seeds / Methidana
  • a pinch Fennel Seeds / Saunf
  • 1/2 tsp Asafoetida / Hing powder
  • 8 Curry Leaves
  • 2 Green Chillies / Hari Mirch chopped
  • 3 tbsp Cooking Oil

Instructions

  • Shred cabbage finely and chop potato and tomato in small pieces.
  • Add cabbage in some lukewarm water for few minutes to remove the worms and insects in the leaves then wash again and drain the water completely and then start to cook.
  • Heat oil in a pan ,add the tempering, when seeds start cracling add curry leaves and chopped green chilies.
  • Add turmeric, chopped potato and cabbage in the tempering.
  • Stir fry for a minute ,add salt and cover and cook on slow flame.
  • When potatoes become tender, then add all the spices and chopped tomato, stir well.
  • Mix and cover and cook for a minute.
  • Add fresh coriander and enjoy.

Notes

Serving suggestions-
serve with chapati and rice ,or use as a stuffing for sandwiches
instead of mango powder you can add lemon juice.
can make this with purple cabbage instead of green cabbage
