Patta Gobhi Aloo Sabji – Stir fried cabbage and potato curry
Patta Gobhi Aloo is a simple stir fry from North India .Cabbage is a healthy and low calorie vegetable ,it can be used as a diet food and to reduce weight .It can be consumed easily by everyone.
Cabbage curry can be made by adding potatoes ,peas ,chana daal or just stir fried with carrot to make kachumber. In this patta gobhi aloo sabji I have added some tomatoes and potatoes to add flavor and color. You can also make it using only chopped cabbage.
Some time people complained about having bloating and gas after they consume cabbage. So in that case try adding ginger, asafoetida and fenugreek in the tempering ,it helps to digest cabbage easily. You can also add some fresh green peas in this sabji to make it more colorful and healthy. instead of green cabbage you can also make this sabji with purple cabbage
Try to choose fresh tender green cabbage to make stir fry as whitish colour cabbage is often too mature and old and can give you bloating after eating. Make sure to wash the cabbage very well before cooking. the best way to clean it to chop it and then soak it in some lukewarm salted water for some time. This helps to destroy the worms and insects which may be hiding inside the leaves layers. Then drain it completely and then start cooking.
No need to add any water in the sabji , it get cooked with the moisture cabbage releases during cooking.
This pattagobhi ki sabji pairs well with roti or parathas or as a side dish with daal chawal meal. The leftover can be stuffed in sandwiches or chapati rolls. It is also a very good to pack in lunch boxes with some curd and chapati.

Aloo aur patta gobhi ki subzi ,Cabbage and Potato fry
Ingredients
- 350 grams Cabbage / Patta Gobhi
- 2 medium Potatoes / Aloo
- 1 Tomatoes / Tamatar
- 1/2 tsp Garam Masala Powder
- 1 tsp Chilli Flakes / Kuti Lal Mirch
- 1 tsp Mango Powder / Amchoor Powder OR 1 tsp lemon juice
- 1/2 tsp Turmeric Powder / Haldi Powder
- a pinch Sugar / Chini
- 1 tsp Salt / Namak
Tempering / Tadka
- 1/2 tsp Mustard Seeds / Rai
- 1/4 tsp Cumin Seeds / Sabut Jeera
- 1/4 tsp Fenugreek Seeds / Methidana
- a pinch Fennel Seeds / Saunf
- 1/2 tsp Asafoetida / Hing powder
- 8 Curry Leaves
- 2 Green Chillies / Hari Mirch chopped
- 3 tbsp Cooking Oil
Instructions
- Shred cabbage finely and chop potato and tomato in small pieces.
- Add cabbage in some lukewarm water for few minutes to remove the worms and insects in the leaves then wash again and drain the water completely and then start to cook.
- Heat oil in a pan ,add the tempering, when seeds start cracling add curry leaves and chopped green chilies.
- Add turmeric, chopped potato and cabbage in the tempering.
- Stir fry for a minute ,add salt and cover and cook on slow flame.
- When potatoes become tender, then add all the spices and chopped tomato, stir well.
- Mix and cover and cook for a minute.
- Add fresh coriander and enjoy.
