- 8 Indian Gooseberry /amla 225 gm
- 150 gm Sugar / Chini
- 1/2 inch Cinnamon /daalchini
- 1/2 tsp Cardamom Powder / Elaichi Powder
- pinch Salt / Namak
- 1/2 tsp Cumin powder crushed
- 10 threads Saffron / Kesar
- 1/3 cup Water / Paani
- 8 Cashew Nuts / Kaju
Wash amla and pressure cook with a glass of water for 3 whistles.
Discard the water , remove the seeds and separate the segments.
Soak the saffron in 1 tbsp warm water and keep aside.
Heat 1.5 tsp oil in a heavy bottom pan and add the cinnamon stick.
Now add amla segments and saute for a minute.
Add soaked saffron, sugar, salt, cashew, 1/3 cup water in the pan and boil on low heat till it become thick like honey. keep stirring in between.
Add cardamom powder and pounded cumin and mix.
Let it cool down completely and then store in a glass jar.
