Instant Amla Murabba- a winter special healthy Indian gooseberry preserve
During winter amla is very easily available everywhere. Amla is a superfood , rich in vitamin C and antioxidants. Rich in fiber so very good for digestion. It improves kidney, liver and heart health. Boost immunity,manage blood sugar, good for hair and overall health.
In India we make variety of recipes using amla. Each family have their own favourite way of including amla in their diet and making preserve, pickle , chutney etc. For regular use fresh chutney with raw amla is the best but the best thing about amla is that the nutritional value of cooked amla remains almost same as the fresh one.
We can make pickle, juices , chutney, rice, jam and many more recipes with amla. Murabba making is an age old technique of preserving amla. The traditional way of making murabba from the whole murabba is quite lengthy and takes time to make and then to mature.
This instant recipe is quite easy and taste quite similar. You can make and store it and use for a long time. Making at home will be easier and cheaper as compared to the store bought stuff. This instant maurabba easily stay fresh for an year.

Instant Amla Murabba
Ingredients
- 8 Indian Gooseberry /amla 225 gm
- 150 gm Sugar / Chini
- 1/2 inch Cinnamon /daalchini
- 1/2 tsp Cardamom Powder / Elaichi Powder
- pinch Salt / Namak
- 1/2 tsp Cumin powder crushed
- 10 threads Saffron / Kesar
- 1/3 cup Water / Paani
- 8 Cashew Nuts / Kaju
Instructions
- Wash amla and pressure cook with a glass of water for 3 whistles.
- Discard the water , remove the seeds and separate the segments.
- Soak the saffron in 1 tbsp warm water and keep aside.
- Heat 1.5 tsp oil in a heavy bottom pan and add the cinnamon stick.
- Now add amla segments and saute for a minute.
- Add soaked saffron, sugar, salt, cashew, 1/3 cup water in the pan and boil on low heat till it become thick like honey. keep stirring in between.
- Add cardamom powder and pounded cumin and mix.
- Let it cool down completely and then store in a glass jar.
