Instructions
Wash the pumpkin rind and then slice into medium size pieces. slice potato and okra in same size.
Heat oil in a pan and add mustard seed, fenugreek seed and fennel seed and let the crackle.
Now add asafoetida and then add turmeric , green chilies and pumpkin peels.
Add salt, stir and then cover the pan with a lid and cook for 2-3 minutes.
Now add the potatoes , mix and cover and cook till half done.
Open the lid and add sliced okra and rest of the spices, mix , cover again and cook till okra get done.
Open the lid and stir fry the sabji for a minute on medium heat.
Now delicious sabji is ready to serve with paratha or rice. Enjoy !
