Kaddu Chilka Sabji | Pumpkin Rind Stir fry

Pumpkin Rind Stir Fry – A healthy and delicious stir fry made with sliced yellow pumpkin rinds

Kaddu ke chilke ki sabzi is the best recipe and healthiest sabzi that uses the nutritious peels of a pumpkin. Usually, people discard the peels after chopping the pumpkin to make curry. This kaddu ke chilke ki sabji is from my grandmother’s kitchen. My mother always made this chilke ki sabji and we all loved the sabji with daal chawal and parathas. Now I always make this when ever I buy pumpkins to make curries or raitas.

Most of the vegetable peels are edible and full of nutrition, but sadly we often discard them. It is good to try new recipes with them to get the health benefits of the vegetable. I always use karela ka chilka in my chapati and poori dough or make a stir fry with potatoes(see other posts) in my blog. Fresh pea pods are also peeled and cooked in a delicious stir fry. Bottle gourd peels are stir fried and then made into a delicious chutney.

You can use both green or yellow peels to make this stir fry but personally I prefer the green ones as they take less time to cook as compared to the yellow peels. You can make this stir fry only with pumpkin peels if they are enough in quantity but if they are less than you can add some potatoes. I always add potatoes, green chilies and some sliced bhindi/ okra in it. If available you can also add few thin slices of raw mango\aam in it. The combination tastes so good that it will become a staple in your kitchen.

How To Make pumpkin peel sabji:

The pumpkin peels should be washed and thinly sliced. If you are using potato and okra then chop them all in the same size. Heat oil in a pan, then make a tempering of mustard and fenugreek seeds and then add green chili, pumpkin peel, salt and turmeric, cover and cook for a few minutes and then add the potato slices. Mix, cover and cook until half done. Now, add the okra slices and the rest of the spices and then cover them and cook till done. Open the lid and stir fry for a few minutes. Your delicious and healthy stir fry is ready. Enjoy with daal chawal or parathas.

Ingredients

  • 2 cup Pumpkin Peel/ Kaddu ka chilka chopped
  • 1 Medium Potatoes / Aloo
  • 12 okra /bhindi approx
  • 3 Green Chillies / Hari Mirch
  • 1 tsp Red Chilli powder / Laal mirch powder
  • 1 tsp Coriander Powder / Dhaniya Powder
  • 1/2 tsp Turmeric Powder / Haldi Powder
  • to taste Salt / Namak
  • 1 tsp Mango Powder / Amchoor Powder
  • 2.5 tbsp Cooking Oil
  • 3/4 tsp Mustard Seeds / Rai *
  • 1/4 tsp Fenugreek Seeds / Methidana
  • 1/3 tsp Fennel Seeds / Saunf
  • 1/4 tsp Asafoetida / Hing powder

Instructions

  • Wash the pumpkin rind and then slice into medium size pieces. slice potato and okra in same size.
  • Heat oil in a pan and add mustard seed, fenugreek seed and fennel seed and let the crackle.
  • Now add asafoetida and then add turmeric , green chilies and pumpkin peels.
  • Add salt, stir and then cover the pan with a lid and cook for 2-3 minutes.
  • Now add the potatoes , mix and cover and cook till half done.
  • Open the lid and add sliced okra and rest of the spices, mix , cover again and cook till okra get done.
  • Open the lid and stir fry the sabji for a minute on medium heat.
  • Now delicious sabji is ready to serve with paratha or rice. Enjoy !
