Instructions
Peel and chop lauki in medium size pieces. chop or crush tomato.
Heat ghee in the pressure cooker or in a pan.
Add cumin seed, when it start crackling , add the chopped green chilies, curry leaves and asafoetida.
Now add turmeric,salt , chili powder and chopped lauki and stir to mix.
Add enough water in the cooker to cover the vegetables.
Close the lid and pressure cook for 3-4 whistles or cook till it become soft. cooking time depends on the quality of the bottle gourd.
When it cool down open the cooker and slightly mash the lauki.
( You can add more hot water at this stage if you want to adjust the consistency.)
Add boondi and ginger and give it a boil.
Switch off the heat and add lemon juice( pinch of sugar) and fresh coriander
Serve with roti, paratha or rice. with a spoon ghee on top.
