Lauki boondi ki sabji-A simple and easy to make bottle gourd and gram flour nugget curry

Lauki Boondi ki sabji is a everyday kind of quick ,simple yet delicious curry. It is quite popular in the state of U.P. Lauki is a summer special vegetable thus It is very easy to digest and light on stomach. We can make so many recipes from bottle gourd. You can make it like a simple stir fry or mix with tomatoes or potatoes, can make kofta, paratha, bhajiya, muthiya and much much more. Everyone have their own favourite way of making it. I love making lauki with chana dal and moong daal.

Lauki is a powerhouse of nutrient and offers numerous health benefits. It is hydrating and have cooling proprties.it support weight loss.improves digestion ,boost heart health and immunity. It also helps in reducing anxiety and stress.

You can use it cooked or make juice from raw bottle gourd. sometimes it can be bitter so better to taste a piece before cooking or making juice of it. Bitter one can be toxic and cause serious health complications

There are many people who even dislike it. In my family we all like gourd, be it bottle gourd, ridge gourd or apple gourd. This boondi wali lauki ki sabji is my mothers recipe, she often makes it for dinner with ghee wali garam chapatis’. Now my kids also like this more than the regular lauki ki sabji.  You can either make it in a cooker in or use a pan to make it.

Lauki Boondi ki sabji

Ingredients

  • 500 gm Bottle gourd/Lauki /Doodhi
  • 1 small Tomatoes / Tamatar
  • 1/2 cup Besan boondi
  • 1 tsp Ginger / Adrak chopped
  • 1/4 cup Fresh Coriander / Cilantro / Hara Dhaniya
  • 1.5 Tsp Lemon juice/ nimbu ka ras
  • to taste Salt / Namak
  • 1/2 tsp Turmeric Powder / Haldi Powder
  • 1/2 tsp Red Chilli powder / Laal mirch powder

tadka/ tempering

  • 3 tbsp Clarified Butter / Desi Ghee
  • 1 tsp Cumin Seeds / Sabut Jeera
  • 1/4 tsp Asafoetida / Hing powder
  • 1 Green Chillies / Hari Mirch chopped
  • few Curry Leaves / Kadi Patta

Instructions

  • Peel and chop lauki in medium size pieces. chop or crush tomato.
  • Heat ghee in the pressure cooker or in a pan.
  • Add cumin seed, when it start crackling , add the chopped green chilies, curry leaves and asafoetida.
  • Now add turmeric,salt , chili powder and chopped lauki and stir to mix.
  • Add enough water in the cooker to cover the vegetables.
  • Close the lid and pressure cook for 3-4 whistles or cook till it become soft. cooking time depends on the quality of the bottle gourd.
  • When it cool down open the cooker and slightly mash the lauki.
  • ( You can add more hot water at this stage if you want to adjust the consistency.)
  • Add boondi and ginger and give it a boil.
  • Switch off the heat and add lemon juice( pinch of sugar) and fresh coriander
  • Serve with roti, paratha or rice. with a spoon ghee on top.
