Take a bowl and mix sooji and curd , mix well.
Now add salt, sugar, chili paste , ginger, turmeric, lemon juice or citric acid , cooking oil and mix.
Now add around 1/2 cup of water and make a semi thick batter of coating consistency, like you make for besan pakoras/fritters
Cover with a lid and Keep aside for 10 minutes.
Till now the rava have soaked the water and may become thicker then add some water and adjust the consistency,.it should be smooth like idli batter now
( You can add red chilli powder instead of green chilli paste )
Heat 2 glasses of water in the steamer,and grease the idli steamer plates.when water start boiling in the steamer only then add eno in the batter and mix well.
Pour the batter in the greased plate of steamer , cover the lid and steam for 15-20 minutes on high heat.
Then switch off the gas,and take out the plate from the steamer after 5 minutes.
To check if the dhoklas are done or not, insert a toothpick in the middle of the pan, if it come clean then it is perfectly done else steam it further for 5 minutes.
Take oil in a small pan,add mustard seeds, sesame seeds ,pinch of asafoetida,curry leaves
When seed start crackling add the sliced green chilies and 2 tbsp of water and stir to mix and then switch of the flame and then pour this tadka over the dhoklas.
Let it cool down for 5 minutes,and cut into pieces
Arrange in a serving platter and garnish with green coriander and fresh coconut.
Serve with mint chutney
