Mumbai masala toast- a crisp potato and vegetable sandwich from the streets of Mumbai

Grilled Mumbai Toast Sandwich, or Aloo Masala Toast Sandwich, is among the most popular and delicious Indian-style sandwiches. Mumbai is popular for its variety of sandwiches. You can find so many stalls and street vendors selling fresh, crisp and delicious sandwiches from morning till night. Toasted, grilled and fresh bread chutney sandwiches are sold at reasonable prices.

This is a very popular street food in Mumbai. You can find these stalls everywhere, especially near railway stations, colleges, office complexes and markets. It is made by stuffing the bread with a flavorful and spicy boiled and mashed potato mixture, and this mixture is the key ingredient of the sandwich. The mixture is quite similar to the batata vada stuffing. A spicy and tangy chutney is also a must to add to these sandwiches. It is also popular as Mumbai Masala Toast and Aloo Masala Sandwich.

To make this sandwich, you can use an electric sandwich maker or make it on a simple handheld stovetop toaster, like the street vendors do. Sandwiches cooked on a stove or gas stove have a nice roasted flavor, but you can also make them on a regular tawa or grill pan, whatever is easily available.

INGREDIENTS NEEDED

  • Potatoes – Boil, peel and mash the potatoes, then make a spicy mixture with them.
  • Herbs – Green chilies, fresh coriander, lemon juice and curry leaves.
  • Spices – Basic spices such as salt, chili powder, turmeric, sandwich masala, cumin and mustard seeds.
  • Oil – Use any cooking oil, butter or ghee to roast the bread.
  • Bread – Use any bread of your choice.
  • Green Chutney – A tangy and spicy mint and coriander chutney is needed to apply to the slices.
  • Cheese – Cheese is optional; use it as per your preference.
  • Vegetables – Sliced tomato, cucumber and capsicum.

How to Make Mumbai Masala Sandwich

Chutney – Make a tangy and spicy chutney with mint, coriander, green chili, lemon and spices, and add some besan sev or a bread slice to give thickness to the chutney.

Potato Masala – Make a tadka in hot oil with urad dal, mustard seeds, cumin seeds, asafoetida, chopped green chilies and curry leaves. Now add turmeric powder, followed by the boiled and mashed potatoes and the remaining spices, and mix well. You can also add some boiled green peas. Roast the mixture for around 2 minutes on low heat. Switch off the heat and add fresh coriander.

Vegetables – Thinly slice the tomato and capsicum and keep aside.

Sandwich – Apply butter to the slices and then apply chutney to the buttered slices. Now spread a layer of the potato mixture over the chutney. Place tomato and capsicum slices over the potato masala and then sprinkle some sandwich masala or chaat masala over the tomato slices.

Cheese – You can add a cheese slice or grate a cheese cube over it, but it is totally optional

Cover with the other bread slice and apply some butter on top side and grill till golden and crisp, serve with ketchup or chutney. When serving apply butter and green chutney on top and garnish with some bhujiya sev and fresh coriander
