Soya Chunks Cutlets | Soya Paneer Kabab

Soya Chunks Cutlets- a healthy high protein vegetarian snack made with soya and paneer

Soya kebab is an easy-to-make, crispy, and filling snack. It is a great healthy option for a tea-time snack or can be served with your meal as a side dish. You can also use it for making burgers, rolls, Frankie’s, or sandwiches.

It is a very healthy cutlet that can be customized according to your taste preferences. You can make it vegan by replacing paneer with sweet potato or tofu. You can make so many variations to suit your taste. You can also add your favorite grated or mashed vegetables to the mixture.

Soya nuggets or granules are very healthy and have become quite popular nowadays because of their high protein content. They are also easily available and reasonably priced compared to many other high-protein foods. However, many people, like me, dislike their strong taste when used to make curries with soya chunks. When soya is used in mashed form in these cutlets , nobody can easily guess that it is soya. Therefore, it is a better option for people who dislike soya chunks.

These cutlets are shallow-fried, but you can deep-fry them if you want. Alternatively, you can simply brush them with some butter or oil and air-fry them. You can also freeze them in a zip lock bag and use them whenever needed.

Ingredients Needed

  • Soya Nuggets: These dehydrated soya nuggets are easily available in grocery stores or can be bought online. You can also use soya granules instead of chunks. The chunks should be soaked or boiled in hot water to make them soft. After squeezing out the excess water, we use the nuggets to make the cutlets.
  • Paneer: Use grated or mashed paneer to add some softness to the cutlets. You can substitute paneer with tofu, boiled potato, or sweet potato to make them vegan. You can also add some corn, peas, or grated beetroot.
  • Gram Flour: To bind everything together, I have used some gram flour. You can also use sattu flour, corn flour, or breadcrumbs instead.
  • Spices: Basic spices are added to these cutlets—salt, chili powder, cumin powder and chaat masala.
  • Fresh Herbs: Mint, coriander, green chili, and lemon juice.
  • Oil: You can use any oil, ghee, or butter to shallow-fry these cutlets, according to your preference.

Soya Nuggets Cutlets | Soya Paneer Kabab

Ingredients

  • 2 cup Soy nuggets/Soya bean ki vadi/Textured Soy Protein
  • 1 cup Cottage cheese / Paneer
  • 1/4 cup Corn Kernels / Makai Dana optional
  • 1 tbsp Ginger / Adrak grated
  • 3 Green Chilies / Hari Mirch chopped
  • 1.5 tsp Red Chili powder / Laal mirch powder
  • to taste Salt / Namak
  • 1 tsp Chat masala
  • 1 Lemons / Nimbu
  • handful Fresh Mint / Hara Pudina chopped
  • 1/3 cup Fresh Coriander / Cilantro / Hara Dhaniya chopped

Instructions

  • Soak the soya nuggets in boiling hot water until they become soft.
  • Squeeze the water and wash them with fresh water 2-3 times .
  • In the mixture jar or vegetable chopper add the soya chunks ,green chili, ginger , coriander and crush them to make a coarse paste.
  • Take out the soya paste in a bowl and add all the dry spices ,chopped mint ,gram flour, mashed paneer and corn and mix well
  • Grease your palms with some oil or ghee and take small portions from the mixture and shape into your preferred shape and size. you can even use any cookie cutter to make these cutlets.
  • Heat oil in a wide pan and shallow fry or deep fry the cutlets from both the sides till golden and crisp.
  • Remove on a kitchen napkin when done.
  • You can lightly brush these cutlets with some oil or butter and air fry on 180 degree for 15 minutes.
  • Serve hot with ketchup or mint chutney and a cup of masala chai .
