Rajgiri and raw papaya Pakode- a crisp and delicious raw papaya and amaranth flour fritters

During Navratri or any religious fast we only use selected vegetables and millets etc. Most of the time we use potato , lauki or arbi in most of our vrat recipes. So it becomes heavy to digest and we want a change from the routine same vegetables.

Raw papaya is a nice substitute to use instead of potato. It can be easily used during any fasting, raw or ripe both type of papaya is used in every fast. This time instead of using grated potato to make pakoda I tried raw papaya instead. The pakoras taste almost same and are better nutrition wise.

You can use raw papaya or even semi ripe papaya can do to make these raw papaya and rajgiri pakodas.  You can also add some grated raw mango in it for a tangy taste. Serve these delicious crisp pakoras with curd, khajoor chutney or any chutney of your choice. I served these with curd and tangy aloo Bukhara chutney.
