Sambharo: a Gujarati style quick stir-fry or a warm salad.
Sambharo is referred to a quick stir fry which stays crisp after cooking. This dish is cooked with a little amount of oil and with minimum spices. You can call it a warm salad. It is served as a side dish with your main course and some times with snacks too.
The most popular sambharo are – cabbage, carrot [gajar], capsicum and raw papaya . Some times sambharo is made with a single vegetable and some times 2-3 vegetables are used to make it colourful and nutritious.
This radish sambharo or mooli ka sambharo is popular during winters. There are many people who can’t digest raw radish so this stir fry makes it easier for them . There are few health conditions in which you can’t eat raw salad or veggies . People on renal diet or after kidney transplant can’t eat anything raw, so this sambharo is a good option for them.
Addition of green chilies gives a nice flavour to it and lemon juice is optional , depends on your choice. Tempering of fenugreek seeds and asafoetida makes it easy to digest. Instead of slicing it you can also grate it using a thick grater.

Mooli Sambharo
Sambharo: a Gujarati style quick stir-fry or a warm salad.
Ingredients
- 2 big Radish/ Mooli
- 2 Green chilies/Hari Mirch chopped
- few Curry Leaves / Kadi Patta
- 1.5 tsp Cooking Oil
- 1/2 tsp Mustard Seeds / Rai kuria
- 1/2 tsp Fenugreek Seeds / Methidana
- pinch Asafoetida / Hing powder
- 1/4 tsp Turmeric Powder / Haldi Powder
- 1 tsp Chili flakes /Kuti hui laal mirch
- to taste Salt / Namak
- 1/2 tsp Lemon Juice / Nimbu Ka Ras
- handful Fresh Coriander / Cilantro / Hara Dhaniya
Instructions
- ) Wash and peel radish and chop into roundels.
- Heat oil in a pan and add mustard seeds and fenugreek seeds. (you can also add carom seeds/ajwain instead of fenugreek seeds )
- When seeds start to crackle then add asafoetida , curry leaves and the chopped green chilies.
- Saute for few seconds and then add turmeric , chili flakes and the sliced radishes.
- Add salt and stir fry on medium heat for 2 minutes till they start looking glossy
- No need to make them soft, switch off the heat and add lemon juice and fresh coriander and mix.
- Serve with with roti, paratha, daal chawal or any fried snacks of your choice.
