Cheesy Baked Mushroom- a delicious baked cheesy mushroom snack

This is a quick and easy recipe of baked cheesy pepper mushroom. They are very nutritious and a good option for vegetarians. Mushroom helps to strengthen our immune system, and are rich in vitamins, minerals and powerful antioxidants. They also function as prebiotics and support gut microbiomes.

In my childhood I never tasted mushroom as they are not cooked in my house, as considered poisonous, wild and inedible. we are not even allowed to touch mushroom , it is referred as saanp ki chatri (snakes umbrella ) So, I have never cooked mushrooms in my kitchen, until my kids start liking mushrooms and requested me to try something with it.

When I tasted a mushroom starter in a restaurant I liked the taste of it and since then I started making curries and snacks using mushrooms. This baked cheesy mushroom is now my family’s favorite starter and I makes it often.

It is a delicious and easy to make starter, even kids can make it with your supervision. You can make the stuffing as per your preference. The mushrooms are cleaned and stuffed with your favourite spices, herbs and cheese. you can customize it as per your choice.

Stuffed baked mushrooms can be made gluten free and dairy free by adding gluten free crumbs or just skipping it and choosing a dairy free cheese.

The cheesy mushroom can be made ahead of time. You can clean and stuff the mushroom and keep them refrigerated and bake only when you want to serve. This can be served as a appetizer or side dish. serve hot with tomato ketchup, mint chutney or any tangy dip of your choice.

Make sure to bake them perfectly as under done or slight raw mushrooms not taste good and are unappetizing so cook them perfectly.

Serve them immediately after baking so they will remain crisp and firm else they may become soggy and not so great to taste.

How To Make Baked Cheesy Mushrooms-

  1. Mushroom -You can use button mushroom or cremini mushroom for this.
  2. Cheese- I have used cream cheese, cheddar or mozzarella for stuffing, you can use your favourite ones.
  3. Breadcrumbs- can use plain crumbs or panko , what ever you have in your pantry.
  4. Herbs- I have used chopped green chilies , some pickled jalapeno, parsley, oregano , chili flakes and crushed pepper.
  5. Olive oil- to brush the mushroom caps with it.

Cheesy Baked Mushroom- a delicious baked cheesy mushroom snack

Ingredients

  • 400 gm Button Mushrooms 2 box
  • 1/2 tsp Dried Basil
  • 1/2 tsp dried oregano
  • 2 Green Chillies / Hari Mirch
  • 1/3 tsp Pepper Powder / Kali Mirch
  • 2 tbsp Fresh Parsley or coriander chopped
  • 2 tsp Olive Oil / Zeitoun Ka Tel
  • 1 tsp Chili flakes /Kuti hui laal mirch
  • 1/2 cup Cream cheese
  • 1/2 cup Mozzarella cheese
  • 2 tbsp Bread Crumbs, Dried

Instructions

  • First of all wash the mushroom quickle in running water and then wipe them well.
  • Break the stalk of all the mushrooms , discard with are not in good conditions and keep aside the rest , we use them for filling.
  • Chop the stalks finely and then heat a tsp of butter in the pan and add the chopped green chilies and the chopped stalks and saute for a minute or till the moisture dries up.
  • Take out the cooked stalks in a bowl and let it come to room teperature.
  • Now add all the spices, cheese, and bread crumbs in it , mix well and taste the seasoning and adjust if needed.
  • Take the mushroom caps in a bowl ,drizzle a tsp of olive oil, pinch salt, pinch chili flakes and mix it well.
  • Now stuff the mushroom with the prepared cheese mixture. The quantity of stuffing depends on your preference.
  • Preheat the oven at 200 degree for 10--12 minutes.
  • line the baking tray with a parchment paper so cleaning will be easier after baking as mushrooms releases a quite of moisture while baking.
  • Arrange the stuffed mushroom on the baking tray, add some cheese on top and bake for around 10 -12 minutes OR till the cheese melts and mushroom shrink and get darker in colour.
  • You can also air fry them at same temperature OR cook in a grill pan or heavy bottom pan , covered with a lid on low temperature.
  • Take out the baked mushrooms when done, can garnish with some cheese/ fresh herbs etc and then serve immediately else they will become soggy when become cold.
  • Serve hot with ketchup, mint sauce or any tangy spicy dip of your choice.

Notes

Note-
Instead of green chilies you can add pickled jalapenos
Can add any cheese of your choice.
