Koosa Ki Sabji- a simple and delicious Lebanese zucchini stir fry
Koosa and Indian videshi tinda/chappan kaddu / summer squash are very much similar to each other . This squesh ki slightly long in shape and the one available in India is round in shape. koosa is commonly used in middle eastern cuisine, mainly used as a stuffed vegetable or as a stir fry.
Koosa is very mild in taste and taste best with few spices. It can be substituted with zucchini or gourd. Long back When I shifted to Dubai, I have not seen this vegetable before so have no idea how to use it in Indian cooking. I love Indian Tinda and that was not easily available here that time. I tried making koosa just like i make tinda and it turn out very nice and comforting. since then it is regular in my kitchen and i keep experimenting with it in different recipes.
The best way to use koosa is to use minimal spices in it and cook till just done, over cooking will spoil the texture of it. This simple stir fry is made in a few minutes and goes very well with any Indian bread of your choice.

koosa ki sabzi
Koosa Ki Sabji- a simple and delicious Lebanese zucchini / chappan kaddu stir fry
Ingredients
- 700 gms koosa / Chappan Kaddu
- 2 Green Chillies / Hari Mirch
- 1 tsp Red Chilli powder / Laal mirch powder
- 3/4 tsp Coriander Powder / Dhaniya Powder
- 1/3 tsp Turmeric Powder / Haldi Powder
- to taste Salt / Namak
- 1.5 tsp Lemon Juice / Nimbu Ka Ras
- 4 tbsp Fresh Coriander / Cilantro / Hara Dhaniya chopped
- 3 tbsp Cooking Oil
- 1 tsp Cumin Seeds / Sabut Jeera
- pinch Asafoetida / Hing powder
- 1/2 cup Water / Paani
- 1 Medium Tomato chopped
Instructions
- Wash and peel koosa and chop into medium size pieces.
- Heat oil in a pan and add cumin seeds. when cumin start to crackle add asafoetida and green chilies.
- Now add the chopped tomato and stir for a minute.
- Add turmeric ,chopped koosa and salt and mix well.
- Now add 1/2 cup water and cover and cook till they are almost done.dont over cook.
- Now add coriander powder and chili flakes and mix, cover and cook till done.
- Now add lemon juice and fresh coriander and mix gently.
- Serve hot with roti ,paratha or any bread of your choice.
