Urad Dal Khichdi | Makar Sankranti Special

Urad dal Khichdi- A one pot meal made with split black lentil, rice and few spices.

Urad dal khichdi is a very simple yet delicious khichdi recipe. You just need a bowl of yogurt , some pickle and papad with khichdi to enjoy a comforting meal.

khichdi is a simple one pot meal that we make using dal and rice and very few spices. Khichdi is very good for digestion and is a gut friendly light food. It is a simple sattvic diet. If you want then you can add your favourite vegetables in it like bengali style bhuni khichdi or the flavorful and delicious Gujarati Vaghareli Khichdi. You can make khichdi with different types of lentil or use mixed lentil as per your choice.

In Uttar Pradesh, usually Khichdi is made with moong dal or tuvar dal. People make this urad dal khichdi especially during winters in North Indian states like Punjab, Uttar Pradesh ,Haryana etc. It is also very popular in the Himachal Region. This is a no onion or garlic sattvic/Jain recipe.

This Urad dal khichdi or Kali dal ki khichdi is specially made on Makar Sankranti / Uttarayan  in some states. Many people also offer this khichdi to needy people on Makar Sankranti . Devotees also distribute packets of raw dal and rice to poor and needy people. Many temples also offer this khichdi as Prashad. Making khichdi at home and offering it to the needy on Sankranti is considered auspicious for the family and ancestors. Though in my hometown,  Mathura, we make green moong dal khichdi on Makar Sankranti.

Makar Sankranti / Uttarayan marks the beginning of Hindu New year as per the Hindu calender. In different Indian states the festival is celebrated by different names- Bihu, Lohri, Pongal, e.t.c. On Sankranti,we donate khichdi, jaggery/gud, till, till ke ladoo, clothes and gajak to the needy. In some states like Rajasthan and Gujarat, enthusiasts also enjoy flying kites on this auspicious day. People stay on their roof top for the whole day and enjoy and celebrate with their family , flying kites, and cooking food there.

How to Make Urad Dal Khichdi
  • Use either short grain or basmati rice of your choice.
  • Can use brown rice instead of white rice.
  • Can replace green chilka daal with urad daal.
  • You can make it easily in a pressure cooker or use a heavy bottom pan.
  • Addition of turmeric is not needed. Do add hing and ginger for good digestion.
  • Ghee gives nice taste and flavour but oil can also be used.
  • Make tempering of cumin, asafoetida, few cloves and peppercorns .
  • You can make it dry like pulao or of soft porridge texture.
  • The ratio of dal and rice can very as per your choice , can add equal or less dal.

Ingredients

  • 1 cup Rice/chawal
  • 2/3 cup urad dal chilka
  • 1 tbsp Ginger / Adrak
  • to taste Salt / Namak
  • 4 tbsp Clarified Butter / Desi Ghee
  • 1 tsp Cumin Seeds / Sabut Jeera
  • 1 tsp coriander powder
  • 1/3 tsp Asafoetida / Hing powder
  • 6 Peppercorns / Sabut Kali Mirch
  • 2 Cloves / Lavang
  • 2 Bay Leaves / Tej Patta

Instructions

  • Wash and soak rice and lentil for 20-30 minutes.
  • In a pressure cooker or heavy bottom pan, add ghee.
  • Now add cumin seeds, asafetida, cloves, peppercorn in the hot ghee and stir to mix.
  • Now add the chopped ginger and bay leaves.
  • Drain water from the soaked rice and lentil and add in the cooker.
  • Add salt and coriander powder and mix.
  • Add double amount of water in the cooker (4 cup) and pressure cook for 2 whistles on medium heat.
  • Let it cool down completely and then open the lid.
  • Serve hot with some curd, pickle and papad.

Notes

Note-
You can adjust the quantity of lentil in it, can add same quantity of rice and lentil or use 2:1
Consistency of khichdi could be dry or soft as per your preference so add water accordingly.
You can add some chopped vegetables in it if you want.
