Shrikhand – A very refreshing and cool Indian dessert made with thickened and strained yoghurt
Shrikhand is a very popular dessert from North India. This is made with strained yoghurt, which is whipped with sugar, saffron and nuts. It is especially popular in Gujarat, Uttar Pradesh and Maharashtra.
This is quite easy and quick to make dessert. It is most popular during festivals and celebrations.
To make Shrikhand, you just need a few simple ingredients. Mix them together and your delicious dessert will be ready. You need good-quality full-fat yoghurt for the best results. The yoghurt should be tied in a muslin cloth and hung for about 5–6 hours so that all the excess water drains out and you get thick yoghurt.
You can collect the whey and use it to make kadhi or curry, or knead chapati dough with it. This whey is full of nutrients, so use it in your cooking.
Soak a few saffron strands in some warm milk. Crush a few green cardamom pods and make a fine powder. Chop your favorite nuts to add to the Shrikhand.
Take the strained, thick hung curd in a bowl and add sugar. Mix well with a spatula and let it rest for 15 minutes so that the sugar melts.
Traditionally, the yoghurt mixture is passed through a sieve to make it smooth and creamy, but to make it easier, you can mix it with a wire whisk or an electric blender.
Now the thick and smooth Shrikhand is ready. Add dry fruits, saffron and cardamom powder according to your taste and preference. you can also add the pulp of your favorite fruit in this to make fruit shrikhand.
Serve it chilled, garnished with a few nuts on top. It easily stays fresh for about 2 weeks in the refrigerator.
Quick version – Instead of using normal yoghurt and hanging it to strain the water, you can use Greek yoghurt and just add sugar, nuts, saffron and cardamom powder. Mix well and your Shrikhand will be ready instantly.

Kesariya shrikhand
Ingredients
- 2 kg Fresh yoghurt -2 kg / Greek yoghurt-1 kg
- 250 gm Sugar / Chini
- 20 Almonds / Badam
- 20 Pistachio / Pista
- 1/4 tsp Saffron / Kesar
- 1/2 tsp Cardamom Powder / Elaichi Powder
Instructions
- Tie yoghurt in a fine muslin cloth and hang it for a least 5-6 hours, so all the excess water will drained out. but don’t hang in warm place otherwise it may become sour.
- Open and take all the yoghurt in a big bowl and mix sugar (you can adjust the quantity of sugar according to your taste)
- If using Greek yogurt then just add sugar ( skip the hanging part)
- Mix and keep aside for 15 minutes. Then strain through a soup strainer, or with a wire whisk .
- Heat saffron in microwave for 40 seconds to make it crisp.
- Then crush it in a mortal and pestle and then soak in little warm milk. heating and then crushing help to get nice colour from saffron.
- Crush or chop almonds and pista.
- Now add saffron,dry fruits and cardamon powder in the yoghurt.mix well
- Chill and serve
