Suhal Aloo Recipe- A popular street food of U.P | सुहाल आलू

Suhal Aloo- A crispy flaky fried snack served with spicy potato masala

Suhal aloo is a specialty from Uttar Pradesh. It is sold as a snack in most of the cities especially popular in Bareilly and Kanpur. Suhal is made with refined flour. You can add some sooji to add crispiness, but it is optional.

The recipe of Suhal is almost similar in all the cities but the size and shape may differ. In Kanpur, it is sold like a round crisp puri and in Bareilly it is cut in four pieces and sold like triangles. The main difference is the potato served with suhal. In Kanpur, they add tadka in potatoes but in Bareilly, they just chop the boiled potatoes and add few spices in it, no tadka or  oil is added in the potatoes. In some shops they also give chutney along with aloo .

You can make Sohal and easily store for a month and serve whenever you want to. It tastes equally good with raita and chutney . My kids love making its chaat , Just drizzle some curd and both the chutneys on it and enjoy like papdi chaat. Now  you can make it and enjoy with different accompaniments on Holi.

Suhal Aloo

Ingredients

  • 1.25 cup Refined Flour / Maida
  • 2 tbsp Cooking Oil
  • 1/4 tsp Carom Seeds / Ajwain
  • to taste Salt / Namak

Aloo

  • 4 Potato boiled
  • 1/2 tsp kasoori methi
  • 1 tsp Red Chilli powder / Laal mirch powder
  • 1 tsp Mango powder
  • to taste Salt / Namak
  • 1 TSP Green Chillies / Hari Mirch chopped
  • 4 tbsp fresh coriander/ hara dhaniya chopped
  • 1/2 tsp lemon juice

Instructions

  • Take a bowl , add refined flour, oil, ajwain and salt and mix it well.
  • Now add water gradually and make a stiff dough, cover and rest for 10 minutes.
  • Make equal size balls from the dough and roll each ball to make a medium thick poori and prick it using a fork.
  • Now cut the poori in four parts to make four triangle pieces.
  • Heat oil in a deep pan and deep fry the pieces on medium heat till golden and crisp.
  • Drain on a tissue napkin to absorb the extra oil.

Aloo

  • Peel the boiled potato and chop into small pieces.
  • Add all the dry spices, green chili and fresh coriander , lemon juice and mix well.
  • Serve these spicy masala potatoes with suhal.
  • Enjoy suhal aloo with some chutney and chai !
