Chili Oil – a flavorful aromatic home made oil blend
Chili oil is a spicy, flavorful oil used to enhance the taste of food. It is made by pouring hot oil over dried chili flakes, along with aromatic and flavorful spices and herbs. The oil is made by gently heating the oil after adding the chilies and spices. This brings out their flavor and aroma and gives the oil a beautiful red color.
Make sure not to cook it over high heat, as the chilies may burn and fail to develop a nice color and taste.
This flavorful oil makes food smell amazing and adds a rich taste without making it overly hot. It gives food a smooth crunch due to the tiny bits of peppers in it.
You can use it to make Fried Rice, Noodles, Soups, Momos, dumplings, dosa, idly, curries, cheelas, and much much more. It can enhance the taste of almost any dish by adding a delicious umami flavor. It can be used with Chinese, Japanese, Korean, Thai, Asian, or almost any other cuisine.
Chili oil is easily available in the market, but making your own chili oil from scratch is very easy. You can customize it according to your preference. Once you start making chili oil at home, you may never want to buy store-bought chili oil again. It is extremely versatile and can be added to a wide variety of dishes.
How To Make Chili Oil
- As the name itself suggests, chili oil is mainly made by infusing red-hot chilies in an oil base.
- Traditionally, Sichuan chili flakes are used to make this oil, but you can use any dried chili flakes, gochujang, Kashmiri chili flakes, Byadgi chilies, or even chopped fresh red chilies. You can also add a few slices of Thai bird’s-eye chilies if you want extra-spicy chili oil. You can use any variety of red chilies, from mild to very hot, depending on your preference or availability.
- Use any neutral-flavored oil, such as sunflower, canola, or grapeseed oil, to infuse the chilies. Make sure not to use oils with a strong flavor or aroma, such as mustard oil or peanut oil.
- Aromatic spices: bay leaves, cinnamon, star anise, sliced ginger, cardamom, and peppercorns.
- Flavorings: salt, sugar, soy sauce, toasted sesame seeds, and vinegar.
- Oil temperature: The oil should be hot enough to extract the flavors but not so hot that it burns the chili flakes. It is therefore better to heat the oil over medium heat.
- Don’t be intimidated by the long list of ingredients. You can also make it with just oil, chili flakes, sesame seeds, ginger, salt, soy sauce, vinegar, and sugar

Chili Oil Recipe
Ingredients
- 1.5 cup Sunflower oil or any neutral oil
- 1/2 cup Chili flakes /Kuti hui laal mirch
- 1 tbsp Kashmiri Chili powder optional
- 3 tsps White sesame seeds /til
- 1/2 tsp Salt / Namak
- 2 tbsp Sugar / Chini
- 1.5 inch Ginger / Adrak
- 1.5 tbsp soya sauce
- 2 Star Anise / Phool Chakri
- 4 Green Cardamom / Hari Elaichi
- 2 Bay Leaves / Tej Patta
- 6 Cloves / Lavang
- 1 tsp Peppercorns / Sabut Kali Mirch
- 1.5 tbsp white vinegar
- 1 Cinnamon – 1 inch
Instructions
- Heat oil in a pan and when it become hot then add all the spices in it except salt, sugar, sesame seeds and vinegar.
- Simmer it for 15 minutes and then switch off the flame and let it sit in the oil to impart the flavors and aroma.
- After around 30 minutes strain the oil and discrad the whole spices else the aroma will become too strong.
- Now add the chili flakes, chili powder, sesame seeds ,salt , sugar and vinegar in the jar in which you want to store it. heat the oil again
- Now add the medium hot oil over the chili flakes and let the oil sizzle .
- Stir to mix and let it cool down completely.
- Stays fresh for 3 months at room temperature.
Notes
- Don’t make the oil too hot, as the chilies may burn and ruin the taste and color.
- You can use any neutral-flavored oil but avoid strong oils like mustard and peanut oil.
- You can add your favorite spices and adjust the quantities of the ingredients listed in the recipe according to your preference.
- If the oil looks too thick, you can add a little more hot oil in it and mix well..
- Whole spices are added for flavoring but you can skip any if any of the spices are not available.
- you can make it with only oil,chili flakes, sesame, ginger, salt, soya sauce, vinegar and sugar
