Jowar Instant Dosa – a healthy, crisp and gluten-free dosa made with sorghum millet

Sorghum or jowar is a healthy millet used to make bhakri, porridge, popcorn and many other dishes. It is a gluten-free millet and a good substitute for rice and wheat.

Jowar is called sorghum, milo, Indian millet, cholam, jawari and jonnalu in different Indian languages. It is used in almost all the states of India.

Jowar is a nutrient-dense, gluten-free ancient grain packed with dietary fiber, complex carbohydrates and essential minerals. It supports digestion, helps manage blood sugar, supports heart health, aids weight management and helps strengthen bones. It is naturally gluten-free.

In rural areas, jowar is mostly used to make roti or bhakri. However, making roti with gluten-free millet flour can be slightly tricky and needs some practice to make it perfectly. Making dosa or cheela with a batter is much easier.

This jowar dosa is popular in Maharashtra and is mostly made for breakfast. It is easy and quick to make with just a few simple ingredients.

It is a light, healthy, gluten-free and easy-to-make breakfast recipe. Do try this dosa and serve it with any spicy or tangy chutney.

You can make BOTH-crisp dosa and soft cheela with the same batter , just add little less water to make cheela’s.

INGREDIENTS NEEDED-

  • Jowar flour – This gluten-free, high-fiber millet flour makes the dosa light and healthy.
  • Rice flour – It helps to make the dosa crisp.
  • Semolina – It helps to make the dosa crispy.
  • Spices – Salt, cumin and crushed peppercorns.
  • Herbs – Green chilli, curry leaves, ginger and fresh coriander leaves.
  • Carrot – Grated carrot is optional.
  • Water – To make the batter.
  • Ghee – Use ghee, butter or oil to roast the dosa.

HOW TO MAKE JOWAR DOSA-

Take a big bowl and add jowar flour, rice flour and semolina. Mix well.

Now add all the spices and finely chopped herbs.

Gradually add water and make a smooth, lump-free and thin batter. Cover and let it rest for 15 minutes.

Heat a tawa and grease it lightly. Pour the batter over it and fill the gaps with the batter.

Cook from both the sides on medium heat until golden and crisp.

Serve with mint chutney or coconut chutney of your choice
