Healthy Ragi Mathri | Millet Chips Recipe

Ragi Mathri- A healthy delicious and easy to make Finger Millet snack recipe

Ragi/ Finger millet / Nachni / Mandua / Mandwa/ Kalvaragu / Ragulu is a highly nutritious, gluten free grain/ millet which is very high in iron, calcium and fiber. It is good for weight loss and bone health and good for kids overall health.

We should include this healthy millet in our regular diet .Can add it in our chapati dough in small amount ,make different type of porridge and snacks with it regularly. I tried making this healthy mathri using ragi flour and it turn out very crisp and delicious . Everyone at my place loved it even my little grandson happily carry these in his tiffinbox .

You can add your favourite spices in it and make in your favourite shape and sizes. I have deep fried these but you can also bake or air fry these and make these more healthier . Enjoy these healthy ragi mathris with tea, coffee or any tangy chutney or dip of your choice.

How To Make Ragi Mathri-

In a bowl take 1/2 cup each of ragi flour,wheat flour , 1/4 cup rice flour and 3 tbsp oil or ghee , rub the ghee or oil well with the flour. Now add salt to taste, chili flakes, sesame seeds, carom seeds, flax seed powder, kasoori methi and mix well. Add milk or water and make a tight dough and rest it for 10 minutes.

Roll a big medium thick poori and then using a small round lid or cutter make small pooris. Heat oil and deep fry on medium heat till golden and crisp. Store in an airtight jar when cool down completely.

Ingredients

  • 1/2 cup Finger millet flour /Ragi /Nachni
  • 1/2 cup Whole Wheat Flour / Atta
  • 1/4 cup Rice Flour / Chawal Ka Atta
  • 3 tbsp Cooking oil or ghee
  • to taste Salt / Namak
  • 1 tbsp flaxseed powder optional
  • 1.5 tsp Chili flakes /Kuti hui laal mirch
  • 1.5 tsp sesame seeds /til
  • 1/4 tsp Carom Seeds / Ajwain
  • 1 tbsp Dried Fenugreek / Kasoori Methi
  • 1/4 tsp Asafoetida / Hing powder optional

Instructions

  • In a bowl add ragi flour, wheat flour and rice flour and mix well.
  • Now add all the spices in it and mix and then add cooking oil or ghee and rub well in the flour.
  • Now using water or milk amake a tight dough and let it rest for 10 minutes.
  • Roll to make a big medium thin poori and using a small lid or mould make small mathris of your favourite shape and size.
  • Heat oil in a pan and deep fry the mathris in medium hot oil till golden and crisp.
  • Drain on a tissue napkin when done.
  • Store in a airtight box when cool down completely.
  • Enjoy with tea, coffee or any tangy spicy dip of your choice.
