Turkish Vegetable Pickle Recipe | Tursu Recipe

Turkish  vegetable pickle- pickled jalapenos, carrots and cucumber- tursu

Turkish vegetable pickle or Tursu is a very simple to make yet taste so delicious .It is very popular in Arab countries .You can make it with a mix of many vegetables or make with just a single vegetables . these pickles are not only delicious but are good for health too.

you can make this pickle with only a single vegetable or use a combination of colourful vegetables as per the preference or  availability. If you are using a vegetable which will release colour like red cabbage or beet then try to pickle it severalty so other vegetable will not absorb its colour.

Try to choose firm and ripe vegetables , over ripe veggies will not remain crunchy for a long time so choose wisely.

The most popular vegetables used for making this pickle are- gherkins(a cucumber variety ), green tomatoes, peppers,carrots, cauliflower, green chili, ginger, white cabbage, green beans, cherry shaped round red chilies, unripe baby melon-kelek ETC.

The pickling process remains the same for all vegetables. This turkish vegetable pickle can be served with falafel, sandwiches ,wraps ,as a side dish with your meal or just add few pieces in your salad.

The liquid from the pickle jar is called as pickle juice and is sold in turkey as Tursu Suyu. It is rich in antioxidants and rich in potassium so good to cure cramps.

Try to choose an sterilized airtight jar for pickling to ensure a long shelf life of the pickle

Ingredients

  • 2 Carrots / Gajar
  • 5 Jalapeno's
  • 2 Cucumber / Kheera / Kakdi
  • few Green Chillies / Hari Mirch
  • few cauliflower florets
  • 1 tsp Ginger/ Adrak grated
  • 1/2 cup White Vinegar / Sirka
  • 1.5 cup Water / Paani
  • 2 tbsp Salt / Namak
  • 1 tbsp Sugar / Chini
  • 15 Whole Black Pepper
  • pinch Parsley
  • 1 tsp Coriander Seeds / Sabut Dhaniya
  • pinch lemon salt/ citric acid optional

Instructions

  • Peel carrots and cucumbers and slice them into roundels.
  • Chop jalapenos into medium thick roundels.break cauliflower into small florets.
  • Take a pan add water ,black peppers and ginger ,give it a boil, lower the heat and .then add vinegar.
  • Remove from flame and let it rest for 2 minutes.
  • Take a jar or bottle.first add cucumbers ,carrots , cauliflower, green chilies and then jalapenos,press gently with a spoon.
  • Add whole peppers, parsley, coriander seeds , ginger and mix
  • Pour the water and vinegar mixture.let it sit for 10 hours and then start using.(you can use it immediately,but taste better after 10 hours.
  • Keep refrigerated
  • serving suggestions-serve with sandwiches, salad,or as a side dish
