Vrat wali lauki Ki sabji – an easy and simple bottle gourd curry to make for Navratri fasting
Vrat wali lauki is a very simple and sattvic recipe. It is made using just fresh herbs and salt so very mild yet delicious in taste. You can make this during fast or when ever you want to have something simple and easy to digest you can surely try this Dahi Wali lauki ki sabji.
During Navratri and other religious’ fasts only few millets ,vegetables and spices are allowed to consume.So only Rock salt, curd and fresh herbs are used to make this delicious dahi wali lauki ki sabji. You can also make it vegan by skipping curd and use lemon juice instead and it will taste superb both ways.

How To Make Vrat Ki Lauki Ki Sabji
This dahi wali lauki is very easy to make. peel and chop lauki in small pieces. ,Make tadka of jeera, hing , green chili in the pressure cooker and then add the lauki and vrat ka sendha namak and 2 tbs of water , pressure cook for 3 whistles or cook till done.
When pressure subsides then open the cooker and add the beaten curd and ginger and give it a boil and keep stirring to avoid curdling. then simmer for 2 minutes. lastly add fresh coriander and some lemon juice and enjoy this vrat ki lauki ki sabji with your vrat ki poori or paratha.

Vrat wali Lauki Ki Sabji I Dahi wali Lauki ki Sabji
Ingredients
- 750 gm Bottle gourd/Lauki /Doodhi
- 1/3 cup Yogurt/Curd/ Dahi
- 1 tsp Ginger / Adrak chopped
- 1/4 cup Fresh Coriander / Cilantro / Hara Dhaniya chopped
- 1 tsp Lemon Juice / Nimbu Ka Ras
- to taste Sendha Namak /Rock Salt
- pinch Sugar / Chini optional
Tadka/ Tempering
- 3 tbsp Ghee or cooking oil
- 1 tsp Cumin Seeds / Sabut Jeera
- 1/4 tsp Asafoetida / Hing powder
- few Curry Leaves / Kadi Patta optional
- 2 Green Chillies / Hari Mirch chopped
Instructions
- Wash , peel and chop the bottle gourd into small cubes.
- Heat ghee or oil in a pressure cooker (you can also cook it in a pan instead of cooker , in that case add little extra water )
- Add cumin seeds in ghee and when it start to crackle add asafoetida, curry leaves and green chilies and stir to mix.
- Adjust the quantity of green chilies as per your taste .
- Add the chopped bottle gourd ,salt and 1/4 cup water and stir to mix.
- Close the lid and pressure cook on medium heat for 3 whistles or till done.
- When the pressure subsides then open the lid and check it is done perfectly or not else give it few more whistles.
- Now add pinch of sugar, beaten curd and the chopped ginger in the cooker and give it a boil and keep stirring to avoid curdling of curd.
- After it start boiling simmer for a minute or 2.
- Switch off the heat and then add chopped fresh coriander and lemon juice.
- Serve with vrat ki poori or paratha with a tsp of ghee on top.
