Grilled Cheesy Pita Pockets I How To Make Pita Pockets

Grilled pita pockets- Crisp and delicious cheesy pita pockets

Pita Pockets- Pita bread or khubz is flatbread made with all purpose flour or with wheat flour. This is the most common staple food in the Arab world
I tried making these filling and easy cheesy  pockets /triangles with three types of pita bread available ,thin like a chapati, medium and thick like a pizza base .
All the pita sandwiches turn out good ,but  personally I like the thicker version best for making these pockets or triangles. Do try and enjoy these delicious pita pockets/triangles.
These pita sandwiches can be served as starter or breakfast. the filling can be adjusted as per your choice but capsicum, corn, olives with cheese taste delicious. You can grill them in a electric grill, sandwich maker or on a hot pan.
These pita snacks are grilled , then sliced and served with ketchup and hot sauce.
I regularly make so many different types of sandwiches and My favorite are-
  • Pineapple salsa sandwich ,
  • Mumbai style grilled potato sandwich
  • Falafel sandwich ,
  • Italain eggplant panini   .
  • Paneer Bhurji Sandwich

Ingredients

  • 5 Pita bread
  • 3/4 cup Corn kernels
  • 2 medium Bell Peppers / Capsicum / Shimla Mirch
  • 1 tbsp Pickled jalapeno
  • 1 cup Cottage cheese or tofu
  • 1/2 cup Black Olives / Kaale Zeitoun
  • 1 cup Grated mozzarella cheese
  • 1 tsp Oregano
  • 1 tsp Salt / Namak
  • 1 tsp Chili flakes /Kuti hui laal mirch
  • 3 tbsp Tomato Ketchup to serve with

Instructions

  • Pressure cook corn kernals for 2 whistles. drain and keep aside.
  • Chop bell peppers, pickled jalapenos in small bite size pieces and wash the pickled olives and gently squeeze them and keep aside
  • Make small cubes of cottage cheese / tofu or crumble it, this is optional , can skip if you want ).
  • Cut open pita bread from one side and make a pocket.
  • Mix every thing - Olives, Corn, jalapenos, capsicum, paneer, some salt, pepper for THE stuffing in a bowl, Can mix mozzarella in it too, or add as per your preference.
  • Slit open the pita pocket from one side like a half moon
  • Stuff the vegetable mixture and cheese in the pita pocket and apply some butter or olive oil over the pita bread.
  • Grill it till golden and crisp
  • Slice into 4 triangles and serve hot.
  • Serving tips-serve with tomato ketchup or salsa dip

    anjana u made this from that khaboos thing we get there

    well i was earlier in the gulf region so i know about khaboos

    one is lebanese bread we called that also khaboos which was thicker

    and the local khaboos was almost like romali roti type

    i used the lebanese one during that time to make pizza

    we get her garlic kulcha but i can also nt make pockets

    this looks delicious

    anjana ji.. this is a good recipe.. i have som eleft over pita bread and nost ingredients u have mentioned.. so will try it.. i tried making pita breads.. but am not getting teh pockets to perfection!!
