Sooji Dhokla- A very healthy steamed snack Savory Semolina Cakes, made from semolina and yogurt
Sooji Dhokla- Dhokla is a very popular snack from the land of Gujarat.It is an instant and very healthy steamed snack made from semolina and yogurt,a variant of the famous ‘Khaman Dhokla’ from the Gujarat state in India. You can call it a steamed savoury cake .
There are so many delicious dhokla recipes made with different ingredients but the basic method remains the same. Dhokla is also a very healthy snack as it is made by steaming the batter and then a tempering is poured over the steamed dhokla to add the flavor and to garnish it.
Dhoklas are made mainly with gram flour,urad daal , rice and chana daal ground paste. There are two ways to make dhoklas, one is by fermenting the batter naturally and the other is instantly making adding Eno fruit salt.
This sooji dhokla is an instant version of dhokla as you need no grinding of the lentils. Just add semolina in some sour yogurt ,give some standing time and the dhokla is ready to steam.
For making it little spicy you can add some green chili and ginger paste or sprinkle some red chili powder or pepper powder on top. If you don’t like to make it spicy then just make it plain , it taste delicious both ways. After steaming it, a tadka is made with mustard seeds, sesame seeds, slit green chilies and curry leaves and poured on the dhokla ,which not only enhance the look but also the taste.
Try using fine sooji/ semolina to make this dhokla or just pulse the sooji few times in the mixer. Eno is the best option to add in dhokla to make it soft and airy but if you don’t have eno then use baking soda but do mix it properly in the batter before steaming. Add lemon juice in the batter or substitute it with citric acid/ tatri but I prefer to use lemon juice. Addition of turmeric is totally optional , you can skip it and make white dhokla.
For a vegan version you can just add lemon juice instead of yogurt and still it turn out good.
for making it healthier you can add grated vegetables in it i.e carrots, cabbage ,beans, corn etc.
Dhokla is usually served with a tangy mint coriander chutney, besan ki chutney , papaya sambharo and few deep fried green chilies.

Sooji Dhokla / Savoury Semolina Cakes
Ingredients
- 1 cup Semolina / Sooji
- 1 cup Yogurt / Dahi Sour
- 1.5 tsp Lemon Juice / Nimbu Ka Ras
- 1 tsp Ginger / Adrak minced
- 1 tsp Green Chillies / Hari Mirch paste or minced
- 1/4 tsp Turmeric Powder / Haldi Powder optional
- To Taste Salt / Namak
- 1 tbsp Fresh Coriander / Cilantro / Hara Dhaniya chopped
- 1 tsp Sugar / Chini
- 3/4 cup Water / Paani approx
- 1 tsp Eno fruit salt
- 1.5 tbsp Cooking Oil
Tempering/ Tadka
- 1.5 tbsp Cooking oil
- 1 tsp White sesame seeds /til
- 3/4 tsp Mustard Seeds / Rai *
- 10 Curry Leaves / Kadi Patta chopped
- Pinch Asafoetida / Hing powder
- 2 tbsp Water / Paani
- 3 Green chilies/Hari Mirch
Instructions
- Take a bowl and mix sooji and curd , mix well.
- Now add salt, sugar, chili paste , ginger, turmeric, lemon juice or citric acid , cooking oil and mix.
- Now add around 1/2 cup of water and make a semi thick batter of coating consistency, like you make for besan pakoras/fritters
- Cover with a lid and Keep aside for 10 minutes.
- Till now the rava have soaked the water and may become thicker then add some water and adjust the consistency,.it should be smooth like idli batter now
- ( You can add red chilli powder instead of green chilli paste )
- Heat 2 glasses of water in the steamer,and grease the idli steamer plates.when water start boiling in the steamer only then add eno in the batter and mix well.
- Pour the batter in the greased plate of steamer , cover the lid and steam for 15-20 minutes on high heat.
- Then switch off the gas,and take out the plate from the steamer after 5 minutes.
- To check if the dhoklas are done or not, insert a toothpick in the middle of the pan, if it come clean then it is perfectly done else steam it further for 5 minutes.
- Take oil in a small pan,add mustard seeds, sesame seeds ,pinch of asafoetida,curry leaves
- When seed start crackling add the sliced green chilies and 2 tbsp of water and stir to mix and then switch of the flame and then pour this tadka over the dhoklas.
- Let it cool down for 5 minutes,and cut into pieces
- Arrange in a serving platter and garnish with green coriander and fresh coconut.
- Serve with mint chutney
Microwave Version
- You can make these dhoklas in a microwave oven too.
- Take a micro wave proof plate and grease it.
- Pour the batter (1/4 inch of thickness) cover and micro high for 3 minutes,
