Kadhai Paneer – Stir fried Cottage cheese and Bell peppers in tangy tomato sauce

Kadhai Paneer -Its among the most popular paneer dishes. Its quite Easy and quick to make recipe  – its basically chunky paneer dish made in a spicy tomato gravy with freshly crushed whole spices. Kadhai paneer is a quick stir fry kind of vegetable . you don’t need to make any curry or gravy to make kadhai paneer.
First you just have to make kadhai masala– for this you have to roast and coarsely grind few spices – coriander seeds, cumin, fennel seeds,pepper corn and kashmiri chili -. Then few tomato slices and capsicum cubes are stir fried slightly in the tempering and then add in the tomato puree and saute add spices and kadhai masala and saute till it release the oil.
Now add capsicum ,tomato cubes and paneer cubes are added in the prepared masala. Then you just have to mix and toss every thing together. Kadhai paneer can be served as a side dish and the leftover can be stuffed in sandwiches and rolls.

Kadhai Paneer

Chunky paneer cubes tossed in a spicy tomato gravy with freshly crushed whole spices.

Ingredients

  • 2 cup Paneer cubes
  • 2 Bell Peppers / Capsicum / Shimla Mirch
  • 2 medium Tomatoes / Tamatar chopped
  • 1 tsp Ginger / Adrak grated
  • 2 Green chilies/Hari Mirch
  • 1.5 tsp Tomato ketchup optional
  • Spices-
  • 1/2 tsp Cumin Seeds / Sabut Jeera
  • 1.5 tsp Dried fenugreek/kasoori methi
  • 1 Bay Leaves / Tej Patta
  • Pinch Garam Masala Powder
  • 1/3 tsp Turmeric Powder / Haldi Powder
  • 1 tsp Chili flakes /Kuti hui laal mirch
  • 1/4 cup milk or fresh cream
  • 1 tsp Salt / Namak
  • 1 tbsp Butter

For kadhai masala

  • 1/2 tsp Cumin Seeds / Sabut Jeera
  • 1/2 tsp Peppercorns / Sabut Kali Mirch
  • 1 tbsp Coriander Seeds / Sabut Dhaniya
  • 3 Whole Kashmiri red chilies
  • 1/4 tsp Fennel Seeds / Saunf

Instructions

  • Make cubes or julienne of tomato ,capsicum and paneer
  • Dry roast coriander seeds , cumin,fennel, pepper corn and whole red kashmiri chilies and then coarsely crush/pound them
  • In a pan heat 4 tbsp oil and saute the capsicum pieces for a minutes add salt, chili powder and some kadhai masala and then take out in a bowl , now add the tomato cubes of a tomato(remove the pulp and then make cubes )and saute for few seconds and remove and keep aside
  • Leach the tomatoes (slice and soak in water for an hour and repeat at least 2 time ) and then use for kidney patients
  • Now add paneer cubes in the same pan, season with salt, chili powder and pinch of kadhai masala, stir fry for a minute and then take out in a plate.
  • Now add 4 tbsp oil in the pan add cumin seeds,chopped green chilies and ginger,saute for few seconds
  • Add puree of 3 tomatoes and salt and saute for a minute.
  • Now add turmeric, 1 tbsp coriander powder , 1 tbsp chili powder ,the crushed kadhai masala,saute , cover and cook till it start releasing the oil.
  • Now add paneer cubes, capsicum pieces ,tomato pieces, tomato ketchup,garam masala ,chili flakesand 1/4 cup milk or fresh cream and mix to coat the paneer pieces with the masala paste and cover and cook for approx 2 minutes .
  • Add crushed kasoori methi/dried fenugreek leaves, ginger slices and 1 tbsp butter and chopped fresh coriander.cook for about a minute .
  • Serve hot with naan,paratha or any Indian bread
