Beetroot sabji- Beetroot Stir Fry -Healthy beet root stir fry
Beetroot sabji/ stir fry is a very healthy ,delicious and easy recipe to include beetroot in our daily diet. Beetroot is a very healthy vegetable. It is packed with so many vitamins, Minerals, and is low in calories and fat. It helps to keep high blood pressure in check.
Initially I don’t like beetroots much but due to its numerous health benefits I started using it ,I often make simple and healthy Beetroot Pulao  and this delicious beetroot raita .
This beetroot sabji is rich in Iron and improves oxygen use up by 20 %.Helps to fight inflammation. Have good amount of fiber so helps to improve digestion. It helps brain health and have anti cancer properties. So we should include this healthy vegetable in our diet.

Beetroot Stir Fry

Ingredients

  • 400 grams Beetroot / Chukandar
  • 1 tbsp sesame seeds /til
  • 1 tsp Cumin Seeds / Sabut Jeera
  • 2.5 tbsp Lemon Juice / Nimbu Ka Ras
  • 1.5 tbsp Sugar / Chini
  • 1.5 tsp Red Chilli powder / Laal mirch powder
  • 1/2 tsp Turmeric Powder / Haldi Powder
  • 1 tsp Salt / Namak
  • 2 tbsp Cooking Oil

Instructions

  • Wash beetroot well ,and pressure cook for 2 whistles.
  • Peel the skin and dice into small pieces.
  • Heat oil in a pan , add cumin seeds ,when become golden then add sesame seeds.
  • Now add turmeric powder and chopped beet root .add salt and mix well, now cover and cook for 1 minute.
  • Add chilli powder,sugar and lemon juice ,mix and cook for a minute,keep stirring.
  • Take out in a serving bowl and sprinkle 1 t.s of roasted sesame seeds on top.

Notes

serving suggestions-serve with  daal,rice or bread of your choice.
