Aloo Poha – a simple delicious quick breakfast item.
Aloo Poha -A quick,simple and delicious snack made with beaten rice,potato and simple spices- specialty from the state of Maharashtra.There are many variations of making poha in each state with little change in tempering or choice of ingredients but the main ingredient remains the same- poha
Aloo Poha -Always use good quality thick poha to make this ,thin variety is not suitable to make poha .On soaking or washing the thin variety turn very soft and become a mash while stir frying.
Aloo Poha /Kande Pohe ( Spicy Beaten Rice )
- 1.5 cup Poha / Pressed Rice
- 4 tbsp Green Peas / Hari Matar boiled
- 1 medium Potatoes / Aloo cubed *
- 1 Tomatoes / Tamatar cubed
- 3 tbsp Peanuts / Moongphali crushed
- 3 tbsp Sprouts
- 2 Green Chillies / Hari Mirch chopped
- 1/2 inch Ginger / Adrak chopped
- 8 Curry Leaves
- 2 tbsp Lemon Juice / Nimbu Ka Ras
- 1 tsp Sugar / Chini
- 1 tsp Red Chilli powder / Laal mirch powder
- 1/2 tsp Turmeric Powder / Haldi Powder
- 1 tsp Mustard Seeds / Rai *
- 3 tbsp Fresh Coriander / Cilantro / Hara Dhaniya
- 4 tbsp Cooking Oil
- Take poha/presed rice in a colander and wash well with water,keep aside.
- Heat oil in pan ,add finely chopped potatoes and cover with a lid.
- Let it cook on medium heat,when potato cooked completely and become golden in colour.take out from the pan and keep aside .*
- Now add mustard seeds in the same oil ,when they start crackling,add chopped green chillies, curry leaves and peanuts.
- Keep stirring till peanuts become light brown in colour.
- Add turmeric and peas in the pan and stir fry for a while.
- Sprinkle 2 tbls of water again on the soaked poha and then add poha in the pan and mix .then add ginger,salt,sugar and chilli powder,mix and stir well.
- Add lemon juice and chopped green coriander.mix and serve with coconut or coriander chutney.
2-Before adding in the pan ,you can sprinkle some more water into poha and make it moist ,if you feel it's too dry.
3-You may add boiled and cubed potatoes,instead of frying the potato cubes and add them at step 5. 2-You can use cashews instead of peanuts. 3-Add 4 tbsp of raw bean sprouts after adding peanuts and stir fry for 1/2 minutes,then add poha,to make a healthy and crunchy snack
